This is a simple meatball recipe that is wrapped in bacon that has delicious results.
Plus, you can’t go wrong with bacon…ever.

Ingredients
- 2lbs of 80/20 ground beef
- 2 large red onions
- 1 cup of Bread crumbs
- Caribeque Honey Heat Rub
- 1lb of bacon
- 1 Egg
- Balsamic Vinegar
- Sugar
- 2 tablespoons of Worcestershire sauce
Meatball Preparation
- First cut 8 pieces of bacon in half and set aside for wrapping the meatballs
- Cook the rest and crumble it up
- you can always ad more bacon - Dice half a red onion
- In a bowl add ground beef, bacon, egg, diced onion, 3 tbs Caribeque Honey Heat rub, bread crumbs, 2 tablespoons of Worcestershire sauce
- Mix together
- don’t over mix just make sure everything is incorporated as evenly as you can - Maek (8) 4oz meatballs
- if you want to make them larger , make 6 - Each meatball will require two half’s of bacon (1 full piece of bacon) wrap one piece in one direction and another in the other direction
- Dust the outside of the meatballs with Caribeque honey heat rub
- Smoke at 180 until the internal temp reaches you desired doneness 160-165 degrees
- I like crispy bacon so I took them of the smoke early and finished them off in a cast iron pan or you can turn up the heat on your smoker and roast them until your desired crispiness level.
Onion Jam Preparation
You can prepare the onion jam will the meatballs are on the smoker
- Cut the other onion in half and slice each half up
- Add a good drizzle of olive oil to a pan over medium heat
- Cook down the onions until they begin to caramelize then salt and pepper to taste
- Add in about 3-4 tablespoons of Balsamic vinegar
- Add in about 3-4 tablespoons of sugar
- Let it reduce down for a few minutes and then take it off the heat
After everything is cooked you can add a little Onion Jam on top of the Bacon Balls and feast!
