Smoked Chicken Drumsticks and Thighs with Sweet Mini Peppers
**Ingredients:**
- 6 chicken drumsticks
- 6 chicken thighs
- 2 tbsp bacon grease
- 3 tbsp Caribeque Calypso Kick
- 1 lb sweet mini peppers
- 2 tbsp olive oil
- 1 tbsp Caribeque Calypso Kick
**Instructions:**
1. Preheat Kamado Joe to 250°F with apple wood.
2. Rub chicken with bacon grease and 3 tbsp Calypso Kick.
3. Toss peppers in olive oil and 1 tbsp Calypso Kick.
4. Place chicken and peppers on the grill.
5. Smoke for 2-2.5 hours until chicken reaches 165°F and peppers are tender.
6. Rest chicken for 10 minutes.
