Smoked chicken halves on your Kamado Joe

Smoked Chicken Halves with Caribeque Island Thyme⁣

Ingredients:⁣

• 2 chicken halves⁣
• 3 tablespoons Caribeque Island Thyme seasoning⁣
• 2 tablespoons olive oil⁣


Instructions:⁣

1. Preparation:⁣
• Preheat your Kamado grill to 275°F, setting it up for indirect cooking.⁣
• Pat the chicken halves dry with paper towels.⁣

2. Seasoning:⁣
• Rub the chicken halves all over with olive oil.⁣
• Generously sprinkle Caribeque Island Thyme seasoning on both sides of the chicken halves, making sure to coat evenly.⁣

3. Smoking:⁣
• Place the chicken halves on the grill, skin side up.⁣
• Add a few chunks of your preferred smoking wood (e.g., apple or cherry) to the coals for additional flavor.⁣
• Smoke the chicken at 275°F for about 1.5 to 2 hours, or until the internal temperature reaches 165°F in the thickest part of the breast and 175°F in the thighs.⁣

4. Finishing:⁣
• Remove the chicken from the grill and let it rest for 10 minutes before serving.⁣
