Pork Fried Rice

Pork Fried Rice with Caribeque Island Thyme


Ingredients:

2 cups cauliflower rice

• 1 lb diced pork loin

 2 tbsp Caribeque Island Thyme

 • 2 tbsp soy sauce

 1 tbsp sesame oil

2 tbsp vegetable oil

3 eggs, beaten

3 scallions, sliced

1 cup peas and carrots

 3 cloves garlic, minced


Instructions:

1. Toss pork with 1 tbsp Island Thyme, then cook in 1 tbsp oil until browned. Remove.

2. Scramble eggs in the same pan; set aside.

3. Sautee garlic, scallions, peas, and carrots in oil until softened.

4. Add cauliflower rice, soy sauce, sesame oil, remaining seasoning, pork, and eggs. Stir-fry until heated through.

5. Garnish with scallions and serve hot!
