Butter injected Smoked Turkey Legs with Island Thyme
Ingredients:
• 4-6 turkey legs
• 32 ozs of water , 2 cups appple juice
• 1/2 cup Caribeque Poultry Brine
• 1 orange, 1 lime (sliced)
• Fresh sage, rosemary, thyme (2 sprigs each)
• 1 stick unsalted butter (melted, for injection)
• Caribeque Island Thyme seasoning
• Apple wood chunks
Instructions:
1. Brine: Mix water, apple juice, brine, orange/lime slices, and herbs. Submerge turkey legs, cover, and refrigerate for 24 hours.
2. Season: Pat dry, inject with melted butter, and rub with Island Thyme seasoning.
3. Smoke: Preheat smoker to 250°F with apple wood. Smoke turkey legs until they reach 175°F internal temp (2-3 hours).
4. Rest & Serve: Let rest 10 minutes and enjoy!
