What says summer more than a nice rack of smoked baby bak ribs?

Ingredients:

  1. Prepare the pellet smoker:

    • Fill the pellet smoker hopper with apple or cherry wood pellets.
    • Preheat the pellet smoker to 225°F (107°C) according to the manufacturer's instructions.
  2. Prepare the ribs:

    • Remove the membrane from the back of the ribs by lifting it with a butter knife and peeling it off.
    • Rinse the ribs under cold water and pat them dry with paper towels.
    • Apply a generous amount of Caribeque Honey Heat Rub to both sides of the ribs, ensuring they are evenly coated.
  3. Smoke the ribs:

    • Place the ribs directly on the smoker grates, bone side down.
    • Close the smoker lid and let the ribs smoke for approximately 3 to 4 hours at 225°F (107°C), or until the internal temperature reaches around 195°F (90°C) and the meat is tender. The smoking time may vary, so use a meat thermometer to check for doneness.
  4. Optional: Glaze with barbecue sauce:

    • If desired, during the last 30 minutes of smoking, brush the ribs with your favorite barbecue sauce.
    • Allow the sauce to caramelize on the ribs by leaving them on the smoker for an additional 15 minutes.
  5. Rest and serve:

    • Once the ribs are cooked to your desired tenderness, carefully remove them from the smoker and let them rest for about 10 minutes.
    • Slice the ribs between the bones and serve them hot with additional barbecue sauce on the side, if desired.
